The dairy supply chain turns raw cow milk collected on French farms into a range of products — drinking milk, cream, butter, cheese, yoghurts and milk desserts, powders — each of which draws on a different fraction of the milk's matter. Following this chain therefore means following not one quantity but several: the raw volume collected, and the fat and protein it contains, which processing distributes among the products.
Scope. Cow milk, whole of France, from farm collection through to dairy products and their end uses, including foreign trade.
Units. Milk is the only SOCLE supply chain counted in four simultaneous units: kt PB (raw weight, shown by default), kt MU, kt MG (fat) and kt MP (protein). The unit banner above the diagram switches between them and the widths are recomputed.
